Canavese Barbera DOC
GRAPES AND VINEYARD
Produced from 100% Barbera grapes.
Vineyard located in the municipality of Levone. Approximately 3500 vines per hectare with a yield per hectare of 60q.
CELLAR
Harvest in the first decade of October. Gentle destemming of the grapes, with a quick lowering of the temperature to 8°C, using the cryomaceration technique; this allows cold control of the must for about 3 days, which enhances the expression of the aromas present on the grapes.
Fermentation is then completed at 25°C for another approximately 12 days.
This is followed by an aging of 4 months in steel and several months in the bottle.
TASTING
Ruby-violet color, with purple highlights.
The nose is rich in fruit, plums, cherries and berries berries, to which floral hints are added.
The sip is fresh, fruity, persistent.
Of excellent drinkability, it accompanies first courses and main courses of white or red meat, cheeses and cured meats.
Alcohol: 12.5%.
