CELLAR
Vendemmia tra la fine di agosto e la prima settimana di settembre.: rapida Harvest between the end of August and the first week of September: rapid and delicate pressing of the grapes without crushing the mass and start of alcoholic fermentation at a controlled temperature of 15-16 degrees. Vinification in temperature-controlled steel tanks; aged for 6 months on fine lees in steel tanks with weekly batonnage before the second fermentation in the bottle. Ageing in bottle on the lees for 24 months.

TASTING
Very pale pink colour; the nose is reminiscent of rosehip, currant and peach blossom.
The palate is fresh, fruity, full and long, with fine, persistent bubbles.
SUGGESTED PAIRINGS
Ideal as an aperitif, this wine pairs well with all fish dishes, such as shellfish and molluscs, but also with seafood pasta and sushi.

Serve chilled at 8° C.
