CELLAR
Harvested at the end of August/beginning of September to obtain musts with greater freshness and acidity, rapid and delicate pressing of the grapes without crushing the mass and start of alcoholic fermentation at a controlled temperature of 15-16 degrees. Fermentation for about 10-15 days. Maturation on the lees in steel vats for 4-5 months. Foaming takes place in a “cuveè”, together with the base wine and sucrose ( liquer de tirage ). Maturation of a minimum of 24 months on the lees; at disgorgement, no “liqueur d’expedition” is added. What is obtained at the end is a bubbly that fully retains the characteristics of the grape variety and bottle ageing.
TASTING
Straw yellow in colour with greenish highlights, the nose is pleasantly elegant with fruity hints, floral notes and bread crust. On the palate it is fresh, savoury and balanced; the perlage is fine and persistent. It is a fresh and delicate wine whose effervescence and acidity stand out quite clearly in the combination of food and bubbles. Excellent as an aperitif, it goes well with hors d’oeuvres, fish, vegetables. Excellent wine throughout the meal and perfect with shellfish and raw fish.
